After giving Data the first opportunity for him to use his artificial thingy for the first time in a number of years, Data acts like the Borg Queen has won his artificial heart as well.

So when the Borg Queen captures Captain Picard, Data plays along, canceling the auto-destruct sequence that Captain Picard had initiated a few moments ago. He also fires three quantum torpedoes at the Phoenix, but sets it up so all three torpedoes go sailing right on past the Phoenix - which jumps to warp a few moments later.

It's now that Data reveals that the Borg Queen wasn't that good of a lay as he smashes a plasma coolant tank, flooding engineering with the coolant. All the organic material in the room melts away upon coming into contact with the coolant.

Even though the Borg Queen tries to grab on to Picard to keep from being liquefied, she falls into the coolant and her organic parts all melt away. When she dies, all the other Borg that were dependent on her also die.

I personally don't think this write-up is detailed enough - not only would Data align himself because of their sex together (let's not think about that, OK?), but also because she's grafting skin onto his body, bringing him closer to being human.

Data says "Resistance is futile" (the Borg's catchphrase) before smashing in the coolant valve.

The Borg Queen doesn't fall - Data rises out of the coolant (which has melted away the grafted skin), and pulls her under.

Also, she's still sort of alive afterwards - after the coolant has been dispersed, Picard goes to the body of the Queen, where the robotic part of her upper body is still alive, just quivering. In order to tell the audience she is well and truly dead, Picard picks up the spine and snaps it in half.

And the Borg are actually returned to normal - they don't die. Many look somewhat perplexed, actually.
