Chen is the oldest of Chinese crime lord Lao Che's two sons, who is with his father and brother at Club Obi-Wan when Lao is attempting to weasel out of paying Indiana Jones for the ashes of Nurhachi, first by giving him a satchel of gold in lieu of the promised diamond, and then by poisoning his drink. Chen shows us his sadistic side when he joins his family in laughing uproariously at Dr. Jones' plight, and when Indy's friend Wu Han attempts to interfere, it is Chen who covertly pulls a revolver and shoots him.
Indy, disoriented by the fast-working poison, rises from the table as Lao and his sons continue to laugh like a trio of drunken hyenas, and stumbles over to a waiter's serving cart which is carrying a platter of flaming meat on a long kebab stick. This he grabs and turns lifting up like a spear. Lao and his sons are still unalarmed and continue guffawing, confident in their victory and obviously not thinking Indy can hit squatt in his condition. They'd be wrong, and, in Chen's case, dead wrong.
Indy lets fly the kebab and it stabs into Chen's chest, impaling him. He screams and reflexively draws his revolver, uselessly firing it one final time before expiring while sitting upright in his chair.
Chen getting impaled actually freaked me out a bit when I was younger. This sequence was incredibly cool, though. Shame the film kind of slowed down a bit after it.
