Choking the very life out of someone makes for a slow, painful and unpleasant death - perfect for the cinema!

Note, chokes and strangles are actually two different things, but for the purposes of this site we lump them into one category. A choke is simply a compression of the airways, resulting in rasping choking sounds and asphyxiation. Strangles are the compression of the blood vessels, resulting in dizziness, "seeing stars" and fainting.
Both of these techniques are commonly used in competitive grappling (judo, collegiate wrestling etc) to submit an opponent or put them to sleep.
